Congratulations on making the first step to preserving more aroma volatile compounds in your filter coffee through Paragon.
Paragon was created in collaboration with Zurich University of Applied Science (ZHAW) after researching the effect of temperature on volatile aroma compounds preservation and the resulting sensory flavour outcomes in coffee.
Using scientific equipment, including Gas Chromatography-Mass Spectrometry (GCMS) and other methods, we measured the chemical effects of chilling coffee extracted straight out of the brewer.
ZHAW measured up to 40% more key aroma volatile aroma compounds in the final brew than the same brew with no chilling.
Paragon extract chilling method was also tested through sensory analysis by multiple blind Q Grader sensory panels, which concluded that Paragon could improve the sensory qualities of filter coffees across many different roast profiles and brewing styles.

HOW TO USE
1) Adjust the height of the Paragon before placing your carafe onto it.
2) Set up your brewing device and paper filter (not included) in the top ring.
3) When you are ready to brew, remove the Paragon Chilling Rock from the freezer, and place it into the basket. Note: ensure that the filter paper doesn't reach the Paragon Chilling Rock, as it can tear during brewing.
4) Commence brewing making sure the coffee runs over the Chilling Rock.
5) Remove the Chilling Rock from the stream after the first third of extraction to avoid heavy volatile compounds.
6) Finish your brew and enjoy.
