The Colombia Pink Bourbon Decaf is a unique coffee that combines the distinct qualities of the Pink Bourbon variety with meticulous processing and decaffeination methods. Originating in the Huila region of Colombia, the exact lineage of Pink Bourbon is debated, with some believing it to be a hybrid of red and yellow Bourbon, while others suggest it could be related to an Ethiopian Landrace.
The coffee's complexity begins with a 60-hour anaerobic fermentation of the washed cherries, enhanced with mosto from the same variety. This crucial step deepens the coffee's flavor profile. A quenching method using hot and cold water then halts fermentation, locking in the aromatic compounds.
The Pristine Precision Drying process, a key factor in maintaining the coffee's quality, involves a 36-hour initial oxidation of the selected and disinfected cherries. The cherries are then dried in a sealed dehumidifier to 11% moisture content, a process lasting 36-40 hours. A week-long stabilization period follows, allowing the flavors to fully develop.
This meticulous approach to cultivation, fermentation, and drying results in an exceptional decaffeinated coffee that showcases the best qualities of the Pink Bourbon variety.
