This is because it takes some time before the temperature of the coffee is detected by the refractometer sensor. The refractometer waits until the sample temperature is accurately measured to begin measuring, thus obtaining accurate, stable measurements. Although this depends on the preparation method, it takes a long time before freshly brewed coffee above 80°C has completely cooled down. With this refractometer, measurement fluctuations of less than 0.1% are reported. This high repeatability allows even inexperienced users to achieve accurate results.
